Tsitska - 60% Otskhanuri Sapere - 40% This wine is a distinctive blend of red (Otskhanuri Sapere) and white (Tsitska) grapes, harvested in two stages to capture the ideal balance of freshness and structure. Tsitska is harvested first. The grapes are gently crushed using a hand-crank crusher, then pressed, and the pure juice is fermented spontaneously in Qvevri with native (wild) yeasts, without any skin contact. About a week later, Otskhanuri Sapere grapes are picked, destemmed, and added to the fermentation without pressing. The must is then co-fermented with Tsitska for around two weeks, allowing the red and white varieties to merge harmoniously. After approximately four weeks, the wine is separated from Otskhanuri Sapere skins, and left to mature in Qvevri for eight months. Finally, it is transferred to stainless steel tanks for a brief one month refinement before bottling unfined, unfiltered, and with no added sulphites, preserving the wine’s pure, natural expression.
